Organic chia, also known as Spanish sage, is a summer-blooming herbaceous plant highly prized for its seeds, which are an interesting dietary addition. Spanish sage, the plant from which its valuable seeds are obtained, is cultivated in the regions of Mexico and Guatemala. The fruit that produces the sage in the cleft contains seeds. They come in three colors: gray, white, and black.
Spanish sage seeds are called chia seeds. Sage was a staple of the Aztec diet. Now it's very popular among travelers because it's a light yet highly nutritious product. It's increasingly being used as an ingredient in healthy desserts, porridge, fruit, cakes, and as a bread topping.
You can add whole or ground seeds to cereals, yogurt, salads, and baked goods. They can also be soaked in water or juice and used as a natural thickener, for example, in soups.
After being poured over with liquid, they begin to swell and, after a few hours of rest, form a characteristic pudding. Such a meal provides a quick, long-lasting feeling of satiety. However, it's worth controlling the amount consumed during the day, especially due to the high fiber content, as excessive intake leads to poor mineral absorption and can even cause excessive bowel movements.
Chia seeds contain up to 35% fat, mostly polyunsaturated fats. The fatty acids they contain are alpha-linolenic, palmitic, linoleic, and oleic acids. Thanks to these, they have a positive effect on memory and concentration. Another 25% of the composition is made up of proteins. They are non-gluten proteins, so these seeds can be eaten by people who have had to exclude gluten from their diet. They contain amino acids such as arginine, glutamic acid, and aspartic acid. For this reason, they can positively influence the improvement of immunity. They also contain a high fiber content of approximately 26 grams per 100 grams of product, which accelerates metabolism. They also contain tocopherols, i.e., vitamin E, which has antioxidant properties, fighting free radicals in our body and thus boosting our immunity. Minerals include potassium, phosphorus, calcium, zinc, iron, copper, and manganese. Thanks to all these minerals, chia is a great addition to our diet, affecting calcium supplementation in the bones, improving sleep quality and concentration, and positively influencing the work of our muscles.

INTERESTS
Chia in Nahuatl means “oily”.
Per 100 grams, it contains more calcium (up to 631 mg) than milk and more omega-3 fatty acids than Atlantic salmon. It also represents an ideal alternative for vegetarians and vegans to supplement their diet with protein.
PREPARATION of the pudding: Add about 8 tablespoons of water to one tablespoon of chia seeds. Mix the seeds with water (or another liquid) several times during the first 30 minutes to loosen them. Then let them rest for at least an hour. After this time, the seeds will disperse evenly in the liquid and form their characteristic pudding.
