Sesame is an annual plant belonging to the oilseed family. It is a branched perennial with a stem approximately 50 centimeters tall. Interestingly, this plant is characterized by large green leaves with serrated edges. For generations, the most valuable element of sesame has been its fruit, which contains seed sacs containing up to 80 tiny sesame seeds. The familiar seeds are characterized by a flat, slightly oval shape and are usually about 3 mm in size. Immediately after being shelled from the pod, they are white. Nevertheless, they take on a slightly creamy color over time.
Interestingly, sesame is one of the oldest oilseeds cultivated by humans. The first evidence of its use can be found in sources dating back as much as 4,000 years. It's important to note that in ancient Babylon, small sesame seeds were considered a spice of the gods themselves. This product was also very popular in Africa, China, and India, where a new variety (Indian sesame) was even bred. Although times have changed, sesame has continued its popularity. Today, it is cultivated extensively in India and China. Nevertheless, the countries of South and Central America, as well as Sudan, are also considered world producers of this delicacy.
Sesame has been a part of human life for so long that it has found a firm place in our culture and even religion. In many cultures, it is considered a symbol of good luck and health. This is no wonder, given that it contains a wealth of vitamins and minerals. Among them, calcium, magnesium, phosphorus, selenium, zinc, and iron deserve special attention. In addition, hulled sesame seeds can supply our body with B vitamins (including essential folic acid) . However, the most valuable components of sesame seeds are unsaturated fatty acids such as sesamol and phenolic sesaminol. These small seeds also contain plant phytosterols, which are essential for the proper functioning of the circulatory system.
Hulled sesame has a sweet, slightly buttery flavor. It is also characterized by its exceptional aroma, which is used not only in cooking but also in the cosmetics and pharmaceutical industries.

APPLICATION

- Thirdly, hulled sesame seeds are perfect as an aromatic coating for chicken or as a crunchy addition to vegetable salads;
- Fourth: Small sesame seeds can be added to homemade whole-grain cookies or used to bake aromatic cakes.
