The most popular are Kancolla Quinoa and Blanka de Juni (both have white seeds), as well as Witulla and Pasancalla (with pinkish-brown seeds and less bitterness). The individual quinoa varieties differ not only in appearance but also in their ingredients and distribution area.
Quinoa is characterized primarily by its high content of easily digestible protein. It is also a source of vitamins E, A, and B. It provides our body with many valuable minerals such as calcium, magnesium, iron, phosphorus, potassium, sodium, and zinc. It is a source of unsaturated fatty acids, flavonoids (especially quercin and kaempferol), and amino acids (including lysine and methionine). Quinoa also contains large amounts of fiber, which supports the digestive system.
Peruvian rice can help prevent atherosclerosis thanks to its beneficial fatty acids, including linoleic and oleic acid. Consuming quinoa seeds also has a positive effect on the skeletal system due to their high calcium content. It's almost 20 times more than in milk! Quinoa also has a positive effect on our nervous and immune systems. Due to its rich antioxidant content, research is currently underway into the possibility of using quinoa for cancer prevention.
