Preparation
- Heat the milk in a pot over medium heat until it almost boils (approx. 80-90°C). Stir occasionally to prevent it from burning.
- Then let the milk cool down a bit until it is lukewarm (approx. 40-45°C).
- Now add the plain yogurt and stir it in well. The yogurt contains the important lactic acid bacteria that are responsible for fermentation.
- Pour the milk-yogurt mixture into clean, heat-resistant containers (e.g., jars) and place them in a warm spot (ideally 40-45°C) where they can rest undisturbed for 6-8 hours. During this time, lactic acid fermentation takes place and the yogurt becomes beautifully creamy.
- Once the yogurt is ready, you can store it in the refrigerator. Just before serving, add the freshly washed and chopped fruit. You can also stir in a little sugar or honey if you prefer it a bit sweeter.
And now your homemade fruit yogurt is ready! It will keep in the refrigerator for about 5-7 days. Feel free to try different fruit combinations – this way you can always create new taste experiences.
