Avocado ice cream

  • 2 ripe avocados
  • 120 ml coconut milk
  • 80 g erythritol
  • 2 tbsp lemon juice
  • 1 pinch of salt

Cut the avocados in half, remove the pit, and put the flesh in a blender. Add coconut milk, erythritol, lemon juice, and salt, then blend everything into a creamy mixture. Freeze the mixture in an ice cream maker or freezer container until the ice cream reaches the desired consistency.
